I am always looking for new ways to cook fish. My husband and I try to eat fish twice a week because it is so good for you. The trouble is I didn’t grow up eating a lot of fish, and I struggle with how to fix it in different ways that we both will like and not get tired of. But, I found a new recipe recently that is quickly becoming my favorite way to eat salmon. It has so much flavor, which is amazing because there are just a few ingredients, and it is very simple to make.
If you like cilantro, ginger root, and garlic, you will love this recipe. The cilantro and ginger root give it such a fresh taste, and the garlic, well, everything is better with garlic. But the ingredient that sends it over the top is the sesame oil. If you have a mini food chopper, it makes preparing this so easy, but would still be quick without it. Also, you can put any leftover chopped ginger root and garlic in the freezer so next time you make this recipe all you will have to do is chop the cilantro. It only takes 12 to 15 minutes to bake, so is perfect for a weeknight dinner when you don’t have a lot of time.
Usually when Jeff asks what is for dinner and I tell him salmon, he gets a kind of sad look on his face. With this recipe, he wasn’t sad at all. And that made me happy! I hope it will make your family happy, too.
THAI SALMON WITH CILANTRO AND GARLIC
1 Tbsp. peeled fresh ginger root, finely minced
- 1 Tbsp. minced, fresh garlic
- 1 Tbsp. finely chopped, fresh cilantro
2 Tbsp. sesame oil (found usually in the Chinese Food Section of the grocery store)
1/4 tsp. salt
1/4 tsp. pepper
1 1/2 lbs. salmon fillets
- Peel fresh ginger root, and place in mini-food processor. Pulse until minced or finely chop it by hand if you don’t have a processor. Set aside.
- Do the same thing with the fresh garlic. Set aside.
- Repeat with the cilantro. Set aside.
- Combine the ginger root, sesame oil, cilantro, garlic, salt, and pepper in the amounts above in a bowl. Stir until mixed well.
- Place salmon in a greased baking dish. Spoon mixture over salmon pieces.
- Bake at 400 degrees for 12-15 minutes. Serves approximately 4 people.
