From what I understand, Cinco de Mayo is celebrated more in the southwestern United States than in Mexico. I think we celebrate it just because we are so grateful to Mexico for giving us things like tacos, enchiladas, chimichangas….I for one am very thankful and can absolutely get behind any holiday where these are eaten. Not that I really need an excuse to eat Mexican food. In fact, I think I could eat Mexican food every day, and never get tired of it. In the past, for Cinco de Mayo, sometimes we have gone to Mexican food restaurants and other times fixed Mexican food at home. If you are celebrating Cinco de Mayo at home this year, an easy, fun way to do it is to have a taco party.
Tacos are a good way to go as they are simple to make, and most of it can be done ahead of time. Then, at the last minute, all you have to do is fry the taco shells while everyone munches on chips and salsa
Rice and beans make great sides and can also be made the day before and reheated when needed. When you are ready to eat, fill bowls full of all different types of condiments for the tacos such as cheese, lettuce, jalapenos, onions, tomatoes, and cilantro so each person can personalize their tacos the way they like. If you live in Arizona, it is easy to turn on the radio to find some Mariachi music to set the atmosphere, but if you don’t live here, buy a CD or download some music for the party.
